Tilt, in this case, refers is the feed/LNB or entire antenna rotation polarisation angle, about the axis line towards the satellite.
The polarisation tilt angle is given on page https://www.satsig.net/ssazelm.htm
If you are aimed at a satellite due south of you then the tilt will be zero and feed/LNB/dish assembly upright.
If you are aimed at a south-west satellite then the rotation required is positive, so many degress clockwise, while facing towards the satellite.
