Does any one have an idea about how many PP Blades (Dell Power-edge R610)  do I need for an iDirect network with 300 remotes, about 85 Mbps downstream traffic and about 60 Mbps upstream traffic?

I am not expert on this but here some guesses / thoughts.

60 Mbits upstream traffic.

Set your remote uplink bit rate according to remote BUC power, remote dish size and link budget. Example 5 Mbit/s

Make some assumption about uplink TDMA efficiency. Say 50%

You need 24 TDMA receivers at the hub and  24 frequency slots, each good for a 5 MBit TDMA carrier.

I would think in terms of one transponder for one big 85 Mbit download carrier operated close to but not at saturation, plus another transponder for all the return link carriers, operating backed off for multi carrier operation, perhaps with higher gain step setting.

I suggest you contact iDirect for their advice.
